2020-05-29 file created Beef Stew - 1 to 2 lbs of lean beef - cut into cubes about 1 in. square. - 1 med. size onion or 1 pkg. cup'o soup mix [Lipton's onion soup mix]. - 4 med. size potatoes - cubed - 4 carrots - cut into 1 in. pieces. - 4 tbsp. ketchup. Wash meat in cold water & place in a 4 qt. pot. Cover meat with water & bring to a boil over medium heat. Add onion or onion soup mix, and ketchup. Cover & simmer until meat is tender -- about 1-1/2 hr. Add carrots & potatoes & cook until done. Add salt to taste. To help tenderize meat, you may add a tsp. of lemon juice in the beginning.
